Prepare the ingredients. Sift the wheat flour, starch and cocoa; this will give the dough more airiness. Brew a mug of strong black tea with lemon.

Separate the yolks from the whites of two eggs.

First, let's prepare the curd balls. In a deep bowl, mix cottage cheese (250 g), two yolks, 3 tbsp starch (you can use any starch), vanillin - 1.5 g and 1 tbsp sugar.

Bring the mixture until smooth (I used a blender).

Pour coconut flakes into the container with the curd filling (if you are not a fan of coconut, you can replace it with 2 tablespoons of semolina and let the mixture brew for 15 minutes until the cereal swells). Mix everything thoroughly.

Grease a baking dish (I have a diameter of 20 cm) with butter, form the curd mass (preferably with wet hands) into balls 3-5 cm in diameter and place them evenly on the bottom of the dish.

Now let's start preparing the biscuit dough. First, let's make solid chocolate liquid: put a saucepan with water on the stove (for a water bath), bring it to a boil over maximum heat, then reduce the heat to medium, place a second saucepan (smaller in diameter) with chocolate on top of the first one and heat it, stirring occasionally . If you come across a low-quality product and the chocolate breaks up into small lumps during the heating process, do not be upset, add a little butter (10-20 g) to it and stir.

Set the oven to warm up to 180-200 C.

Beat two eggs into a bowl, add two whites (left over from the curd filling) and the remaining sugar. Stir until a homogeneous fluffy mass of yellow-cream color is formed.

Without ceasing to work with a whisk, pour the dry ingredients of the dough into the egg-sugar mixture (flour - 6 tbsp, starch - 3 tbsp, cocoa - 1 tbsp, baking powder - 1/2 tsp, salt - on the tip of a knife ). Thoroughly whisk the ingredients until smooth.

Add liquid chocolate to the bowl.

Mix the dough until all ingredients are evenly distributed.

Pour the chocolate mixture into the mold, trying to cover each curd ball.

Bake the pie in an oven preheated to 180-200 C for 30-35 minutes (it’s better not to open the oven, otherwise the dough will fall off). After the time has passed, check the readiness with a toothpick (pierce the biscuit with it and remove it from it; if the stick remains dry, you can remove the pan from the oven).

Leave the finished product in the mold for 10-15 minutes to cool (do not touch it, the dough is still subject to change and may fall off). Then we pierce the biscuit with a toothpick (15-20 times) along the entire perimeter and soak it with black tea and lemon. As it cools, the dessert will absorb all the liquid like a sponge and become juicy and aromatic.

To my taste, the combination of cottage cheese and coconut tastes better when chilled, so I recommend putting our chocolate pie in the refrigerator for 30-40 minutes.

It is better to cut the dessert in the middle of the curd balls, so white circles will appear on the cut among the chocolate sponge cake, revealing the secret of this dish.

On top of the pie you can pour icing from butter (40 g) and the remaining (from a whole bar) chocolate (45 g), brought to a liquid state in a water bath, as well as another sweet ingredient: berry jam, preserves, condensed milk or fruit syrup.
