If you have collected a large number of mushrooms, in particular champignons, be sure to make several jars delicious preservation. In this form, mushrooms fried champignons for the winter in jars are perfectly stored, and with them you can cook any dish: first, second, salad, pastries, etc. Fried champignons they turn out very tasty and fragrant, the main thing is to fry them exclusively in butter. If you are going to eat mushrooms on fasting days, then of course it is best to fry them in vegetable oil, because of this they will not be stored worse, but will also turn out to be very useful and inviting. I think that mushroom lovers know that this "forest dweller" can replace the consumption of meat for the body. That is why they are so loved by vegetarians and people who observe fast days and, of course, losing weight.

How to prepare champignons for future use

Champignon mushrooms collected in a forest or in a clearing should be well examined so that there are no damages on the sections (for example, holes from worms). Otherwise, the affected mushrooms should be thrown away and not used for harvesting. Also, strongly overgrown mushrooms should not be used, since they have absorbed all the worst and the use of such mushrooms can cause poisoning. It is best to use medium-sized and completely unopened mushrooms. Wash each mushroom thoroughly under running water. Some remove the upper part (layer) from the mushroom cap, but this is not necessary. Just rinse it well.

Put butter (or ghee) in a frying pan and heat it well.

Add chopped mushrooms.

It is better not to cover the mushrooms with a lid, as they will release water even more.

We fry the mushrooms, stirring from time to time so that they do not burn. Frying time can take from 15 to 40 minutes, depending on the size of the pieces.

When the mushrooms are ready, you can add a little extra butter so that when laying they are completely in oil.

While the mushrooms are fried, sterilize the jars.

Put the finished fried mushrooms in jars, tamping with a large spoon or spatula.
