The tree must be mature, because otherwise it will not be possible to get a lot of juice from it, and the birch itself will hardly endure the process of extracting juice. It is best to choose a tree that grows on a hill, as this will avoid the accumulation of excess moisture at its roots, which can cause deterioration in the quality of the juice.

In order to prepare juice during the period of spring sap flow, you should use a drill with a diameter of 5 to 8 mm to drill a hole in a tree at a height of at least one and a half meters from the ground. Insert a tube into the resulting hole and place a container for juice below, tightening its top with 1 layer of gauze so that insects and debris do not get into the drink. During the day, the tree gives up to 6-8 liters of juice. After the collection is completed, the hole should be closed with a garden pitch so that the tree does not suffer from prolonged loss of juice. Keep the juice in the refrigerator for no more than 10 days. In order to use this product throughout the year, it should be preserved by adding natural lemon juice. The drink is rolled into jars immediately after it is heated to a boil.
