  • a glass of milk;
  • sugar – 100 grams;
  • 2 yolks;
  • ½ teaspoon salt;

  • dry yeast – 25 grams or a packet of “quick” yeast;
  • kilogram of flour;
  • yolk and 30 ml of milk - for greasing the top of the baked goods.

Let's start cooking:

  1. The first step is to prepare the dough for the test. To do this, all the milk must be heated;
  2. Add yeast to warm milk and dissolve in it;
  3. Add 2 large spoons of granulated sugar and stir;
  4. As soon as the entire mixture becomes homogeneous, sift 1 large spoon of flour into it and stir;
  5. Cover the top of the dough with a towel and put it in a warm place for 10-15 minutes;
  6. Meanwhile, place the butter in a saucepan, put it on the fire and heat until completely melted;
  7. Add two yolks into the suitable dough and pour in warm melted butter;
  8. Then pour in the rest of the granulated sugar and stir with a whisk;
  9. At the end, vanilla powder, salt are added to the base and flour is sifted;
  10. It is better to add flour in parts so that the dough is fluffy;
  11. After this, everything is thoroughly mixed, first with a spoon and then by hand;
  12. Cover the cup with the dough with a towel and leave to infuse at room temperature. The dough should stand for about 40-60 minutes;
  13. Once the dough has risen, you can begin to form the buns. Buns can be made in different shapes. Let's look at the most popular ones.

  1. Determine the size of the braids by eye, they can be made large, then the total amount of dough should be divided into two or three parts;
  2. Knead each part thoroughly;
  3. Divide into three flagella and roll out;
  4. Next, the flagella must be braided in the form of a braid;
  5. We use the same principle to make the rest of the braids;
  6. Next, mix the yolk and milk in a cup, but there is no need to beat, just stir until smooth;
  7. Approached braids need to be greased with the egg-milk mixture on top and sides;

To make buns, we offer you two recipes for proven dough made with milk. I use the first option, knead it and leave it in the bread maker.

Ingredients:

Dough recipe No. 1:

  • Dry instant yeast - 2.5 teaspoons,
  • Premium wheat flour – 600 g,
  • Salt – 2 teaspoons,
  • Sugar 4-5 tbsp. spoons,
  • Butter – 2 tbsp. spoons,
  • Milk – 410 ml.

Test recipe No. 2:

  • Milk – 300 ml,
  • Yeast (dry active) – 2 teaspoons,
  • Butter – 100 grams,
  • Wheat flour (premium grade) 700 – 800 grams,
  • Granulated sugar – 150 grams,
  • Vanilla sugar to taste
  • Salt to taste
  • Chicken eggs – 2 pieces.

For the curd filling:

  • Cottage cheese (any) - 0.5 kg,
  • Granulated sugar – 100 grams,
  • Salt – 1 pinch,
  • Sour cream 2 - 3 tbsp. spoons,
  • Chicken eggs – 1 piece.
  • Lemon zest – 1 tbsp. spoon,
  • Vanilla sugar - optional.

Cooking process:

IN step by step recipe The first version of the dough is used, it is kneaded in a bread machine. In my Panasonic I need to select a special mode for the “basic” test; the duration of this program is 2 hours 20 minutes. During this time, the dough is kneaded, allowed to stand, then kneaded again and kneaded again. After the signal, you can already work with it.

Yeast dough for buns knead by hand not as difficult as many people think. First you need to heat the milk so that it does not boil, but is barely warm. IN a small amount of milk, add granulated sugar and yeast, dissolve the sugar (50 grams) completely in the milk, cover the cup with milk and yeast with a napkin and place in a warm place for fermentation.

While the yeast is rising, you need to sift the flour and melt the butter. When the yeast rises in a lush head, you need to add the remaining warm milk, granulated sugar, salt and vanilla sugar. Mix everything thoroughly until the sugar and salt crystals dissolve.

Break into a separate cup chicken eggs and beat them lightly so that the mass becomes homogeneous, and then pour them into a common container. We also send the melted butter there. Mix everything again.

All that remains is to add sifted flour to the liquid dough base and knead a soft dough that should not stick to your hands. Place it in a deep cup, lightly sprinkle with flour and cover with a napkin. You also need to wrap the cup of dough well or simply place it in a warm place to rise. if you have electric oven, where you can adjust the temperature to 40 degrees, you can also use the oven. There will definitely be no drafts there.

The dough that has risen for the first time needs to be pressed down with your hands and after 20 - 30 minutes you can start cutting the dough for buns.

While the dough is rising, you need to start preparing the curd filling. For the filling, it is best to use fatty cottage cheese, but it should not be too wet. You can grind the cottage cheese through a sieve so that the mass is homogeneous, or you can use unground cottage cheese with grains. I had two types of ready-made cottage cheese, I just mixed it and added a raw egg. In this case, when part of the cottage cheese is already soft, sour cream is not added. You will definitely need sour cream in dry cottage cheese. At your discretion, you can add salt and vanillin to the filling, but it is better not to use sugar right away. It is better to add it to the buns themselves during cooking. At the end, add to the curd filling lemon zest, it will add a special aroma and taste to the finished baked goods, although if you don’t like lemon, you can exclude the zest from the list of ingredients. Mix all ingredients for the filling well and set aside for now.

Sprinkle the work surface with flour or grease vegetable oil. The risen yeast dough must be kneaded before you start working with it. Very good proportions, the dough squeaks so pleasantly as you work.

The entire volume must be divided into small lumps. As always, my assistant helps me. The dough from the bread machine is kneaded quite well; when working with it, you may not even need flour at all.

Roll out each ball of dough into a thin flat cake to fill with filling. There are many options for beautiful bun shapes, which one you choose for yourself is up to you. I'll offer you mine. For each cake we make two slits so that they are located opposite each other as far as possible, trying not to break through the edges.

Place the cottage cheese filling in the center of the flatbread and sprinkle it with sugar.

All that remains is to try to stretch the cut edges, inserting one into the other, as if we were wrapping the filling and fastening the clothes with a button. Try to pinch the overlapping ends to the sides of the bun so that they do not roll back during baking.

The second option for making filled buns:

On each cake you need to make 3 cuts, let each petal of dough be different in size. That is, as a result we should get a rose. Place a tablespoon of curd filling in the middle of the flatbread and begin to wrap the petals. Take the smallest petal and carefully wrap it around the cottage cheese. Next, take a larger petal and wrap it around the cottage cheese on the other side, while fastening the petals together. We wrap the remaining largest petal around the already folded dough petals.

Place the finished buns with cottage cheese on a baking sheet greased with butter or vegetable oil and, if desired, grease with beaten egg or sugar water. Place the pan in a warm place to rise for 15-20 minutes.

Then you need to place the baking sheet with cottage cheese buns in an oven preheated to 180 degrees and bake for about 30 minutes (the time depends on the size of the buns).

The ingredients specified in the recipe make two baking sheets of buns or one baking sheet and a small pie.

Remove the hot buns with cottage cheese from the sheet and place on a plate. It is not advisable to eat hot baked goods, but warm ones are welcome! Optionally, with a cup aromatic tea and a glass of cool milk, mmmmmm – song!
