Caesar salad with chicken and croutons is a unique classic of the restaurant menu. The uniqueness of this salad can be explained by its accessible ingredients, which are skillfully combined so successfully that the demand for this dish extends to many countries and segments of society.

It would seem that this salad must have been named after Julius Caesar, or maybe he even invented it. After all, these ancient Romans knew a lot about food. However, if you do a little research on this salad, you will discover that it is named not for some prominent Roman emperor, but for Caesar Cardini, a Mexican chef working in Tijuana in the 1920s. Fast forward to this century and it is perhaps the most popular restaurant salad in the world.

The original Cardini recipe included romaine, garlic, croutons, Parmesan cheese, boiled eggs, olive oil and Worcestershire sauce, which is now often inferior to garlic sauce. It is said that he was staunchly opposed to the addition of anchovies, arguing that Worcestershire sauce was quite capable of providing the desired flavor. That is why the classic Caesar recipe is often characterized by two main ingredients: chicken and croutons. And this could actually become a platform for making this dish popular. Combining different ingredients in this salad has also become popular. Nowadays, anchovies and raw eggs are often added to Caesar's recipe.

Raw eggs should not be used in food prepared for pregnant women, infants, or small children. The raw yolk can be replaced with one tablespoon of mayonnaise. You can also use half-raw eggs - boiled for one minute in boiling water.

  • eggs (yolk) – 1 pc.;
  • garlic – 2 cloves;
  • olive oil – 5-7 tbsp. l.;
  • lemon – 0.5 pcs.;
  • mustard – 2 tbsp. l.;
  • salt pepper.

Preparation

For the Caesar salad we need croutons; we will use homemade croutons. To prepare bread croutons, crush the garlic cloves and pour in 4-5 tbsp. l. Olive oil must be cold pressed. Let it sit for 10 minutes so that later, when frying, the bread cubes will be maximally saturated with garlic aroma.

Now let's move on to the chicken fillet. After first washing and drying, cut the poultry fillet into pieces of the same size, sprinkle with spices and mix. Let the meat marinate for 10-15 minutes.

Heat a frying pan and add the remaining garlic-flavored oil, discarding the garlic cloves. Place the sliced bread and fry, stirring, until crusty.
Separately, pour in 1-2 tbsp. l. vegetable oil, fry chicken meat over high heat until cooked.

At the same time, grate the cheese. We choose small, large chips at our discretion, or, for example, translucent plates of arbitrary shape, as in this example.

The dressing “conducts” the salad and at this stage it is worth doing the job conscientiously. For Caesar salad dressing egg yolk Keep in boiling water for 1 minute, bringing it to a soft-boiled state. Then, using a slotted spoon, transfer it to a convenient container, add ground pepper, salt, 2-3 tbsp. l. olive oil, mustard and freshly squeezed lemon juice - mix all ingredients vigorously until smooth.

7. Let's move on to assembling the Caesar salad. Be sure to tear clean lettuce leaves with your hands.

8. Place the fried butter on a paper napkin so that excess fat does not get into our salad. Without excess oil, place the fried meat on top of the lettuce leaves.

9. Water from above salad dressing.

10. Throw in croutons.

11. Supplement with “Parmesan” - cheese slices with a hint of spice.

Mix symbolically, without zeal, to preserve the integrity of the components and not turn the Caesar salad into a mess.
