Pear pies are not prepared as often as, for example, apple pies. Somehow it happened like that! But they turn out no less tasty than all other fruit baked goods. I wondered why? And to find the answer, I spent several days preparing different versions with these fruits.

I cooked until everyone in my household asked for mercy. The main burden fell on them - tasting and sharing impressions. And if they coped with the first part of their mission quite easily, so easily that the pie did not even have time to cool down, as it was eaten almost at lightning speed!

But the second part was more difficult to cope with, because after the next piece they ate, everyone said out loud: “It’s delicious, but you can’t eat it like that!”, and asked not to cook them anymore.

But the next day came, someone went to the store to buy bread and brought pears again. And everyone asked: “What kind of pie will there be today?” Then everything repeated itself, and this happened for several days in a row.

I never found the answer to why pear varant is cooked less frequently than apple varant, but I fed everyone with pies! And today I am happy to share recipes with you. Maybe you can find this answer.

We will need:

  • pears - 3-4 pcs (depending on the size of the fruit and the baking dish)
  • flour - 2 cups
  • sour cream - 300 gr
  • egg - 4 pcs
  • sugar - 150 g (6 tablespoons)
  • vanilla sugar - 10 g (sachet)
  • baking powder for dough - 1 tbsp. spoon
  • lemon - 0.5 pcs
  • butter - 0.5 tbsp. spoons

Preparation:

For baking, I use a silicone mold 22 cm in diameter. But you can also use a springform pan and a frying pan.

1. Wash the pears and remove the skin if desired. This time I have them with thin skin, and I didn’t peel them. If the skin is rough, then it is better to peel it, so the baked goods will turn out more tender.


2. Cut the pears first into two halves, and then into small slices no more than 1 cm thick. This will make them easier to fit into the mold.

3. Grease the mold with butter; grab both the bottom and sides. In principle, the pie turns out to be “unpretentious”, and even without oil it can be easily taken out after baking. But I still lubricate it a little; it seems more tasty to me that way.

4. Lay out the slices overlapping, with the sharp end down. You can post them in any order. But you still need to try to do it as carefully as possible. We will turn the finished baked goods over, so to make the picture please us, we will try to do it beautifully.


5. Grate half a lemon on a fine grater, removing only the yellow part - the zest. Sprinkle the remaining peeled lemon over the pear slices, squeezing it directly with your hands. We use a medium-sized lemon.

6. Let's prepare everything right away necessary ingredients for the test so that everything is at hand. We will make the dough quickly.

7. Break the eggs into a bowl and beat them into foam using a mixer.


8. Add sugar and vanilla sugar and continue beating until sugar is completely dissolved, about 2 minutes.


9. Add sour cream and lemon zest, and continue beating until smooth.

10. Sift flour and baking powder in advance. Start gradually introducing them into the mixture, continuing to beat. The dough should be free of lumps, uniform in consistency, moderately liquid and viscous.


11. Pour the dough over the pears, let stand for 2-3 minutes so that it is distributed in the mold.


12. Place in an oven preheated to 180 degrees and bake for 10 minutes.

13. Then reduce the temperature to 150 degrees and bake for another 50 minutes. During the entire baking process, try not to open the oven so that the dough does not fall off. In this case, the cake will turn out tall and airy.


14. Take out the finished pie and let it cool slightly. Then turn it out onto a large flat plate. Cut into triangles and serve with tea or coffee.



Enjoy eating! Usually such a pie is eaten immediately, which is called “hot, hot.” No one is waiting for it to cool down, but otherwise, there’s no reason to wait. It's delicious when it's warm. Or maybe it’s delicious cold too? But there is no way to verify this.

Pear strudel

We love to eat this pie with apples, but as an experiment, I decided to make it with pears. At the end of the experiment I will share my impressions.


We will need for the test:

  • sour cream – 100 gr
  • egg – 1 pc.
  • sugar – 2 tbsp. spoons
  • butter – 2 tbsp. spoons
  • flour – 1.5 – 2 cups flour

For filling:

  • pears – 4 -5 pcs.
  • sugar – 1 glass
  • butter 80-100 g
  • walnuts – 2 handfuls

Preparation:

To prepare baked goods, you need a not very tall mold with a fairly large diameter. During the entire baking process, we will take out the cake and do some manipulations with it. Therefore, it must be accessible from all sides of the form.

1. Knead the dough. To do this, you need to beat the egg with sugar, you can use a mixer, or you can beat it with a whisk. There is only one egg, and it will be done quite quickly.


2. Continuing to beat, add sour cream, soft butter, which must be taken out in advance and let it lie at room temperature.

3. Then slowly stir in the sifted flour. Place flour by eye, 1.5 or 2 cups, depending on the size of the egg and the thickness of the sour cream. Knead the dough until it is quite soft and elastic.


4. Roll it into a ball, then cover it with a napkin and let it lie for 10-15 minutes. You can also keep it in the refrigerator. But then it will be more difficult to roll it out. So I leave it lying on the table.


5. In the meantime, let's start with the filling. Wash the pears, peel and cut into small pieces. If their skin is rough, it is better to peel it. There is no need to chop very finely so that the pie contains pieces and not pear puree. Cut only 4 pieces at first. Then we'll see if we need another one.


6. Chop the nuts by rolling them with a rolling pin, but not very finely, the pieces should remain tangible. If you can’t find nuts, you can do without them; the baked goods will also be very tasty. But with nuts it will be simply tastiest.

By the way, you can use any nuts.

7. Now it’s time for the test. We need a lot of free space on the kitchen table. We will roll out the dough in a very large layer and very thin.

8. To prevent it from sticking to the table and rolling pin, grease the table vegetable oil. Knead the dough again, and then begin to roll it out into a wide, long oval.


Rolling out the dough will be quite easy. It's okay if the oval isn't the perfect shape. But do not forget that you need to roll it out thinly.

9. Now place the chopped pears on the rolled out layer of dough. Now look. If you think there is not enough filling, cut more.


10. Then sprinkle evenly with nuts, then sugar and finally cut the butter into cubes. It is better to cut it by taking it out of the refrigerator. I missed this moment. And I left the butter on the table, so it melted for me, and I had to cut it a little coarsely.


You can add either 100 grams or 80 grams of oil, depending on how dietary option you choose. I add 80 grams, this is quite enough for us.

11. Roll the dough with the filling into a roll. Try to do this carefully so that it does not tear. But even if this happens by chance, don’t despair, it’s okay. Everything will work out!


12. Roll up the roll and carefully move it into the mold. I use a large silicone mold with low sides. I place the roll in it in such a way that its edges do not fit tightly to the walls. There must be free access from all sides. Do not pinch the edges to allow access to the filling.


13. Preheat the oven to 180 degrees and place our workpiece in it.

14. After 15-20 minutes, the butter will melt and melt the sugar, and meaty caramel will begin to flow out of the edges. When there is enough of it to scoop with a spoon, you will need to take out the mold every 5-7 minutes and pour the top with this caramel.



15. Bake until cooked and browned top crust. This will take about 60 minutes, but it all depends on the features of the oven. It may take a little more or a little less time.


16. When the pie is hot, pick it up on both sides with large wide spatulas and transfer it to a dish. If you wait, then it will be more difficult to do it later, the caramel will harden.

Pear pie with nut cream

In general, in the original, such a dessert is prepared with almonds ground into flour, butter, sugar, eggs, rum and vanilla, and the filling that is prepared in this case is called frangipane. I'll give you today original recipe, but instead of almonds, I will use regular walnuts.


Topic of the article - simple recipes, so walnuts. But if you want to make such a pie according to the original Italian recipe- use only almonds, no other nuts will work.

For the test we need:

  • flour - 200 gr
  • chilled butter - 110 g
  • egg - 1 pc.
  • 2-3 spoons of ice water

For the nut cream:

  • walnuts or almonds - 150 g
  • sugar - 0.25 cups
  • butter - 5 tbsp. spoons
  • egg - 1 pc.
  • egg white - 1 pc.
  • cognac or rum - 1 tbsp. spoon


For filling:

  • pears - 3 pcs.
  • lemon juice - 1 tbsp. spoon
  • apricot jam or thick jam- 4 tbsp. spoons

Preparation:

For preparation, I use a silicone mold with a diameter of 22 cm.

1. Sift the flour into a bowl, add the chopped butter and grind the mixture into crumbs, I do this with my hands, but you can also use a blender.



2. Add egg, mix. Then add 2-3 tbsp. spoons of ice water. Knead the dough. Roll it into a ball, wrap it in film and put it in the refrigerator for 1 hour.



3. Let's start preparing the cream. Grind almonds or nuts into flour.


4. Continuing to beat, add butter, sugar, egg, egg white, cognac or rum one by one.

5. Beat well until smooth and creamy.


6. Peel two pears, cut out the core and the inner core that turns into a stick, it is hard and it is better to cut it off. Cut them lengthwise into long layers. To prevent them from darkening, sprinkle them with lemon juice.

To prevent them from “floating” during cooking, when purchasing, choose them so that they are firm.

7. Ready dough Roll out into a thin layer according to the size of the mold so that there is enough for both the bottom and the sides.

8. Grease the pan with oil, just a little bit. We have butter in the dough. And put the dough into the mold, distributing it evenly over the bottom and sides.


9. Place nut cream in the dough pan.


Arrange the pear slices, overlapping them. You can lightly press them into the cream.


10. Without peeling or removing the tail, cut the remaining pear into thin layers, without cutting a little to the end and without removing the stick. Arrange on top of the cream and pears in the form of a fan.


11. Preheat the oven to 180 degrees. Bake for 50-55 minutes. The pears will turn golden and the batter will also brown. So the pie is ready.

12. Let the cake cool slightly and carefully transfer it from the pan to a plate. You can use a wide spatula for this.


1. Separate the whites from the yolks. Try to separate them in such a way that not a single drop of yolk gets into the whites.

2. Beat the whites until foamy. Using a mixer you can do this quickly and easily. The readiness of the proteins is determined by the fact that when the cup is tilted to the side, the proteins remain motionless.


3. In a separate bowl, beat the yolks with sugar. Add vanilla sugar, butter room temperature, continuing to beat.



4. Sift the flour and baking powder and gradually add it to the yolk mass, also continuing to beat.


5. Add milk. Stir until smooth.


6. Transfer the whites into the resulting mass, and removing the mixer, mix everything using a spatula or spoon.


7. Divide the dough into two equal parts, at least approximately. Add poppy seeds to one of the parts and stir thoroughly.

8. Grease the pan with butter and sprinkle lightly breadcrumbs, distribute them evenly over the entire surface.


9. Pour the mixture with poppy seeds into the first layer.

10. Cut two pears in half and then cut into long slices, removing the core. If their skin is rough, it is also better to peel it off. Place the slices on the bottom in the form of a fan.


11. Fill with the second dough. And place the remaining chopped pear on top as you wish.


12. Place the oven on preheat and heat it to 185 degrees.

13. Bake for 55 minutes until done. The finished pie will become a beautiful ruddy color, and when you pierce it with a toothpick, there should be no batter left on it.

14. Then take it out, let it cool a little and put it on a dish. You can cover it on top as in the previous recipe. apricot jam or jam.


You can place pear slices in the center and sprinkle on the pie powdered sugar and topped with chocolate chips.
