We send our cake to bake in a preheated oven for 35-40 minutes at 200 degrees. As always, check readiness with a wooden skewer; it should come out dry.

My “career” as a wife and housewife began with mastering the classic charlotte recipe. My mother called this delicious charlotte “dacha” because it was made from apples collected at the dacha. In our brand new Polish oven it turned out amazingly fluffy.

Since this pie is considered banal and elementary, the description of the process of its preparation is usually reduced to a couple of lines. My rather lengthy description is dedicated to inexperienced home pastry chefs and anticipates their questions.

Ingredients

  • Four decent sized eggs;
  • 180 g granulated sugar;
  • 150 g flour;
  • three to five apples of sweet and sour taste;
  • 5 g vanilla sugar;
  • a little cinnamon (optional);
  • a pinch of salt.

How to do

  1. From clean apples, cut into quarters, cut out the “centers” with seeds. Then cut into small slices.
  2. Pour all the sugar (vanilla too), salt into a deep container (basin or bowl), beat the eggs there, beat with a whisk or mixer. The mass should lighten and increase in volume.
  3. Add flour in several additions, continuing to beat. The result should be a non-lumpy, smooth mass.
  4. Line a mold (diameter 22 - 24 cm) with baking paper, generously coat with butter, sprinkle with sugar (if the bottom will be the top after baking) or flour (if the top of the charlotte will be the baked top).
  5. Place apple slices all over the bottom, sprinkle with cinnamon if desired.
  6. Pour the dough on top in a spiral - start from the edges of the charlotte and move towards the center.
  7. Lightly tap the pan on the table a couple of times. This will release excess air and distribute the dough more evenly.
  8. Place in an oven preheated to 180°C. In my oven the process takes between sixty and seventy-five minutes. The baking time depends on the number and juiciness of the apples, as well as on your particular oven.
  9. Trace the finished product along the contour with a suitable knife with a thin blade, turn it over onto a board or flat dish.

My comments

  • I strongly recommend placing baking paper on the bottom of any shape. If you bake in a springform pan, the apples may leak through the gap during baking. If you bake in a ceramic form, it will be easier to remove the charlotte from it.
  • I love the variation of the charlotte recipe, when there is a lot of fruit and not enough dough. In this case, you should take five apples for baking. Biscuit lovers a small amount fruits may be limited to three apples.
  • Is your mixer low on power? Then you will get a more fluffy charlotte if you beat the whites and sugar separately, and then add the yolks, continuing to beat.
  • Do not use apples that are too unripe for cooking - when baking in the oven, they give off excess moisture. Overripe fruits with starchy pulp are also not suitable - they will turn into mush.
  • There is no need to add any baking powder. The sponge cake will rise perfectly and be fluffy on eggs alone.

My signature charlotte with apples - recipe with photos step by step

I developed my signature recipe using a reliable old remedy - experience. All you have to do is go through all the technological operations step by step and get the coveted lush apple charlotte.

Ingredients

  • Four large eggs;
  • 225 g flour;
  • 175 g sugar;
  • 140 ml vegetable oil without a pronounced aroma;
  • 5 g vanilla sugar:
  • 1000 kg of sweet and sour apples;
  • one teaspoon (without a slide) of soda;
  • salt on the tip of a knife.

How to do

We cut the washed apples into quarters, remove the seed nests, and cut into slices.

Place sugar, salt, vanilla sugar in a tall container and break the eggs there. Pour in vegetable oil. Beat first at medium speed for about 2 - 3 minutes.

Then beat at high speed for 3 - 4 minutes. The mass will become lighter and increase slightly in volume.

Sift flour together with soda.

Add flour to the whipped mixture in two to three additions, continuing to beat. You will get a liquid dough, as in the photo.

Cut a square piece of baking paper, line the bottom of a round springform pan (diameter 24 cm), sprinkle with sugar and flour.

Place the first layer of apple slices along the bottom, pour in about half of the dough, twist the mold left and right so that the dough is more evenly distributed.

Distribute remaining apples.

Pour the remaining dough onto them, distribute it using a spoon and scroll the mold in different directions. Hit the pan on the table a couple of times to release excess air.

Bake the charlotte with apples in an oven preheated to 180°C for about 75 minutes. Readiness to check with a splinter. It should come out completely dry from the fluffiest part of the cake.

My comments

  • It is possible to replace vegetable oil with butter or melted pork lard. Taste and appearance will vary - the most fluffy is charlotte with vegetable oil. Most "creamy" delicate taste Charlotte will have it with butter, pork lard will give the dough elasticity and “juiciness”.
  • Sprinkle over apples if desired. I do not do this. What I like about this pie is the delicate, pure apple taste and aroma.
  • The best charlotte is made with sweet and sour, strong green apples. They will give enough, but not excessive juice, in finished product will retain their shape, their sourness will successfully contrast with the sweet taste of the juicy biscuit.

  • a handful of raisins;
  • 250 g cottage cheese (18%);
  • 750 g apples;
  • 120 g sugar;
  • 140 g flour;
  • one tablespoon of corn starch;
  • half a teaspoon of soda;
  • 5 g vanilla sugar.

How to do

  1. Wash the apples, remove the seed pods, cut into thin slices.
  2. Wash and dry the raisins.
  3. Heat oil (two tablespoons) in a saucepan with a thick bottom, add sugar. Stirring, bring the sugar to a beautiful light caramel color. Make sure that the mixture does not burn!
  4. Place apple slices in caramel, stir, cook for a couple of minutes.
  5. Beat with any suitable kitchen gadget egg yolks with cottage cheese and remaining butter.
  6. Beat the egg whites, adding sugar little by little, until stiff peaks form.
  7. Carefully mix the mixture with cottage cheese and whipped egg whites.
  8. Grease a mold (24 - 26 cm in diameter) with butter, sprinkle with sugar and flour.
  9. Layer apples with raisins and curd dough until the form is filled out. There should be a curd mass on top.
  10. Bake the charlotte in a hot (200°C) oven for about one hour. Remember that all ovens are different - choose the baking mode specifically for yours. oven.

Delicious charlotte with apples and cream

This charlotte is reminiscent of tenderness. Only there is more filling and less dough.

Ingredients

  • Five medium apples;
  • five eggs;
  • 110 ml cream (30%);
  • 210 g flour;
  • 90 g sugar;

I don’t even know what to call apple manna or semolina charlotte correctly. But it doesn't matter. Delicious, tender and satisfying dessert. If prepared correctly, no one will feel the cottage cheese taste.

You will need:

  • Cottage cheese – 250 g
  • Semolina – 200 g
  • Sugar – 150 g
  • Egg – 3 pcs.
  • Baking powder – 1 tsp.
  • Sour cream – 100 g
  • Apples – 4-5 pcs.
  • Vanillin

Preparation:

  • Beat cottage cheese together with sour cream until smooth. If there are any curd lumps left in the dough, you will feel them, and when you knock them out until smooth, you won’t even realize that there is curd in the composition
  • Mix semolina with baking powder
  • Separate the whites from the yolks. Beat the whites until foamy, then fan in half the granulated sugar and continue beating with a mixer until soft peaks form.

  • Beat the yolk mass with the rest of the recipe sand and vanillin until white

  • Mix curd mass with yolk, then pour semolina. Knead everything using a silicone spatula
  • Add the protein part of the dough in parts and mix gently with a spatula until the structure is homogeneous. We do not use a mixer so as not to destroy the airiness of the protein.
  • Cut apples into pieces and mix with dough

  • Grease the pan with oil and sprinkle with flour, shaking off excess

  • I took a different path. Some of the fruits were mixed with the dough, some were laid out after the first test layer, and the rest was spread on the surface. Bake in the oven at 180 degrees for 55 minutes.

I increased the number of apples in the recipe since I only used two when baking. This is not enough. Although it still turned out delicious and was eaten quickly.

The easiest puff pastry pie with apples

This recipe doesn't even require kneading the dough. And if you take apples that have already been prepared, like mine, then the process will take very little time.

Let's prepare:
